Ingredients
  

TWINKIE CAKE INGREDIENTS

  • ¾ cups (90 g) Gluten-free flour blend (with xanthan gum, or add ½ tsp if needed)
  • 1/4 cup (25 g) Almond Flour
  • 2 tbsp (14 g) Coconut Flour
  • 1/3 cup (67 g) Allulose- I use Lakanto Golden (allulose-monk fruit blend)
  • 1/2 tsp (2 g) Baking Powder
  • 1/4 tsp (1g) Baking Soda
  • 1/4 tsp (1g) Salt
  • 3.5 oz. Unsweetened Almond Milk. (Or any plant-based milk)
  • 2 tbsp (1 oz.) Melted Coconut Oil
  • 2 tbsp (1 oz.) Unsweetened Applesauce (egg replacer)
  • 1 tsp Vanilla Extract
  • 1 tsp Apple Cider Vinegar
  • 1 tbsp Orange Juice
  • 2 tsp Orange Zest

VEGAN MASHMALLOW FLUFF FILLING

  • 1/2 cup (4 oz) Aquafaba (chickpea brine from a can, unsalted)
  • 1/4 tsp Cream of Tartar
  • 60 grams Powdered Allulose
  • 1/2 tsp Vanilla Extract

Instructions
 

Make the Sponge Cake

    Preheat oven to 325°F (163°C). Grease a Twinkie mold or use a silicone bar mold.

    • Mix dry ingredients – In a bowl, whisk together GF flour, almond flour, coconut flour, Lakanto Golden, baking powder, baking soda, and salt.
    • Mix wet ingredients – In another bowl, whisk together almond milk, coconut oil, applesauce, vanilla, and apple cider vinegar.
    • Combine – Fold the wet ingredients into the dry ingredients until smooth.
    • Fill & bake – Pour batter into molds (about 3/4 full) and bake for 18-22 minutes, or until golden brown and firm.
    • Cool completely before filling.

    Vegan Marshmallow Fluff:

    • Whip the aquafaba – Using a stand or hand mixer, beat aquafaba and cream of tartar on high for 4-5 minutes until soft peaks form.
    • Chill for 10 minutes to help it set.

    Fill the Cakes

    • Transfer the filling to a piping bag with a small round tip (or use a ziplock bag with a corner cut).
    • Insert the tip into three spots along the bottom of each Twinkie and gently fill.
    • Serve immediately or chill for an even better texture!

    Storage Tips

    • Fridge: Store in an airtight container for up to 3 days (aquafaba doesn’t last as long as other fillings).
    • Freezer: For longer storage, freeze the sponge cakes separately and fill before serving.
