TWINKIE CAKE INGREDIENTS
- 1 ½ cups Gluten-free flour blend (with xanthan gum, or add ½ tsp if needed)
- 1 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1/4 tsp Salt
- 1/2 cup Allulose
- 1/2 tsp Monk Fruit Powder
- 1/2 cup Unsweetened Applesauce
- 1/3 cup Melted Coconut Oil
- ½ cup Orange Juice
- 1/4 cup Unsweetened Almond Milk. (Or any plant-based milk)
- 1 tbsp Apple Cider Vinegar
- 1 ½ tsp Vanilla Extract
- 1 tbsp Orange Zest
VEGAN MASHMALLOW FLUFF FILLING
- 90 grams Aquafaba (chickpea brine from a can, unsalted)
- 1/4 tsp Cream of Tartar
- 60 grams Powdered Allulost
- 1/2 tsp Vanilla Extract
- 1 tbsp Orange Juice
- ½ tsp Orange zest
Preheat Oven & Prepare Pan
Instructions for the Cake Batter
In a large bowl, whisk together gluten-free flour, baking powder, baking soda, salt, allulose, and monk fruit powder.
In another bowl, mix applesauce, melted coconut oil, fresh orange juice, almond milk, apple cider vinegar, vanilla extract, and orange zest.
Gradually add the wet ingredients to the dry ingredients, stirring until smooth.
Bake
Fill each mold about ¾ full.
Bake for 18-20 minutes, or until a toothpick comes out clean.
Let cakes cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
Instructions for the Vegan Marshmallow Fluff:
In a large mixing bowl, add aquafaba and cream of tartar.
Using a hand mixer or stand mixer, whip on high for 4-5 minutes until soft peaks form.
Add vanilla extract, fresh orange juice, and orange zest, then whip for another 2-3 minutes until stiff peaks form.
The mixture should look glossy and hold its shape like marshmallow fluff.
